I see there is a plugin for Electrum called "Email". I added it and supplied the necessary credentials. But I don't see that is has any functionality. What exactly is it supposed to do and how do you use it? I was hoping it would allow for sending an email to someone requesting BTC or allow me to pay someone via email.

Once you have saved a payment request, this plugin adds a menu "send via e-mail"
it also checks for incoming payment requests in your INBOX.

Thanks! That's exactly the info I was looking for!
