we can expect they earn less than 1% of total wagering btc, like 100000btc wagering we expect them earn 1000btc. they are not public company so i don't think the owner will tell us the figure, so we can calculate and estimate from the total wagering and house edge.

Unless Site itself is going show you official statistics you can only guess. It can be pretty accurate if you account every bet.
But it will be tedious process, and unless you are conduction some sort of research are waste of time imo. What do you need that information for anyway?
