The last food I ate was supper and it was the best ever. I had fried chicken and some fried potatoes. It has been close to 3 months ever since I had such a mouth watering meal. I think it was also sweet now that I was done with exams in and was in total mood to spend the holiday. I love chicken and whenever I get the opportunity to eat, i can honestly say that it is always on of the best moments ever. Hope will eat it often through this festive season. What was yours?

I ate grilled apple and Swiss cheese sandwich. Just want to share one of my favorite quick meals.

Ingredients:
2 slices whole wheat bread
1 1/2 teaspoons olive oil
1/2 Granny Smith apple - peeled, cored and thinly sliced
1/3 cup shredded Swiss cheese

Preheat a skillet over medium heat. Lightly brush one side of each slice of bread with the olive oil. Place 1 slice of bread, olive oil side down into the skillet, and arrange the apple slices evenly over the top. Sprinkle the Swiss cheese over the apple, then top with the remaining slice of bread, olive oil-side up. Cook until the bread is golden brown, then flip the sandwich over, and cook until the other side is golden brown and the cheese has melted, 1 to 2 more minutes.

Served just within 2-3 minutes!
