Hello,

I would like to create an altcoin that can be easily mined with low CPU for educational purposes.
Can anyone recommend a forkon Github ? Is CryptoNote a good solutions ?

Anything can be mined with a low CPU as long as not many people are mining it. The difficulty retarget will take care of it.

But if you want a public coin that you can still mine with a CPU, then one of your best bet for an algo is scrypt-jane with a high n-factor (17 or higher) at which point GPUs are roughly as fast as CPUs.

You can probably mine Joincoin's Bastion algo (which is a multi algo coin) with a CPU and find blocks.

There are already GPU miners for cryptonote coins.

If this is for educational purposed then I would fork a bitcoin clone. Recently there were two that launched with new algos. They are CPU only at the moment, until someone makes a GPU miner for it.
