So I recently updated Bitcoin Core to the latest version after not using it for a while and on the bottom it says "No block source available..." and that it is 7 years and 2 weeks behind. And it does not process any new blocks, in addition to it being stuck on 0 blocks processed. Although, there are 8 active connections to the bitcoin network but nothing has happened over the course of a few hours. So what should I do for it to completely catch up?

Try reindexing. Start Bitcoin Core with the -reindex flag and let it do its thing. It should then be reindexing and syncing.
