Find out if the payment has been processed, If you use online banking this info should be easy to find, otherwise, call your bank or drop in. The SEPA Transfer should take max 3 days, i think that time limit is part of the SEPA system, i could be wrong.
Main point is, i've made 4 SEPA payments in the past 9 days, large amounts, all went through in 1 - 2 days, and Mt Gox processed on their end almost immediately.
make sure you've used the correct message, If it turns out that you've not, i suppose you should email mt gox about it, but thats probably where you'll run into trouble what with them being so busy.

Withdrew last Sunday, got money on Monday.
Withdrew another one on Monday, still to arrive as of late Wednesday.
It fluctuates, but usually no more than 5 business days.

I have the same problem.
I made the transfer Friday and the money arrived to mtgox's European account on Tuesday. To this date, my mtgox account has not been credited with the amount I've sent. I've sent two email messages to mtgox (one yesterday and another one today), but didn't receive a reply yet, on any of them.
I'm not suggesting he/they won't actually credit the account at some point in the future, but the time it takes to have money transferred to a mtgox account, in some cases, is disappointing, taking into account how fast the market is moving. I believe they should hire more people, at least to reply to the emails where people like me are wondering what happened to their money. Just a thought...

I made two SEPA withdrawals from MtGox in May, and both arrived on the following day. This was surprisingly good to me, since here in Finland it often takes 2 days to transfer between different local banks.
The day before yesterday I made another one, and I just checked my account, it has not arrived yet. Given it is a busy time at MtGox, and something like 3 to 4 days is expected from SEPA payments, I am not too worried. I have previously contacted them when my LR transfer did not show up, and they fixed the situation in no time.

made a IBAN Transfer on saturday (when prices were 9-13$) and still got no confirmation. Heck I wished I could have bought BTC for 13$...

Here my experience with MtGox: Money sended on 03.06 Friday, accounted on Tuesday. Money sended last Wednesday and accounted today ! A quesion Email answered in a couple of hours by Anton, team MtGox. so for me, is perfect. Origin account is in Germany. I hope this bank in France leave the account of MtGox open... ! Notice that German Postbank doesn't do SEPA properly so it it is not entirely clear if it will ever reach Mt.Gox. I transfered money to them 7 days ago and it hasn't reached them yet.
If all these problems are related to Postbank I suggest closing all your accounts there.
