I mean something like genesis mining but instead of the hashpower going to their pool and the "profit" just ending up in my wallet, I'd like to choose my own pool, as in the same way  that I can choose a pool when i rent off nicehash or miningrigrentals. That way I can also easily mine altcoins with the same algo.

I think hashflare has something like that where you can choose from a different number of pools and allocate whatever power you have to three different pools. I don't know if that is what you are asking or the legitimatize of hashflare.
