https://blockchain.info/tags
Sorry folks, this is just not obvious at all what one should do here. I tried to fill out the forms, but always got back some error message, even Invalid URL.

Can anybody explain me in plain English, what is this service is for and how does it work, preferably with examples?

Bitcoin addresses contain a checksum, so it is very unlikely that mistyping an address will cause you to lose money.

Address tags enable you to label your public bitcoin address with a short name and external link. Anytime the address is shown on blockchain.info the name and link will be shown.

I can read the text on the web site but perhaps an example to make it more visual?

Another good question is how you can find the http://blockchain.info/tags page from the http://blockchain.info front page? I see no link. Is it like a secret page, or just bad web design?

You can see here that 2 BTC were sent to "SatoshiDICE 48%".
http://blockchain.info/tx/f10bafaa94b21f16f0a5c16ae730933e414262a49fb77535acdf096148ea2a37

The address 1dice8EMZmqKvrGE4Qc9bUFf9PX3xaYDp has been tagged with the short name "SatoshiDICE 48%".  Therefore, whenever 1dice8EMZmqKvrGE4Qc9bUFf9PX3xaYDp shows up in the blockchain, blockchain.info provides the short name and a link to http://satoshidice.com/

No

What should you put in the field "Signature" ?

You have to sign a message from the address you are tagging and copy the signature into that field:
