I've never traded with an exchange except Mtgox. But I hate being beholden to one company. With that in mind...
If you weren't using Mtgox, what exchange would you use and why?

I prefer Coinbase to provide my exchange functionality (note: I didn't call it an exchange, as I'm sure that would invite flames).
Why? 1) I can buy 1000BTC at any time, instantly locking in the price. I receive the BTC within 3 days. My USD stays in my FDIC-insured bank account until it is needed 2) All the delays are low variance. The convoluted transferring of BTC and USD here and there (ie Dwolla & Gox) can take 3-30 days -- I don't want that uncertainty.
PS. I am in USA, so YMMV

To clarify: I can buy the coins with no money in my account. Lock in the price. Then transfer the money in 3-4 days later? Or does them money have to be in the account to buy? I just started using Coinbase, but so far as I know they don't keep USD accounts. Your Coinbase account is denominated solely in BTC, and USD is transferred from/to your external bank account whenever you buy/sell. The ACH transfer (which is started as soon as you enter a buy or sell order) takes 3-4 business days to clear.

Is BitFloor completely out of favor at this point? I was considering picking up some bitcoin and was going to use BitFloor. The free transfer via ING P2P, and the "get paid to provide liquidity" both seemed like good incentives over bitStamp and CoinBase that each require various fees to get fiat into the exchange and charge exchange fees.
EDIT: As of 2013-04-17 BitFloor has ceased all operations.
