As per title. I want to know what service allows me to get cash, or spendable currency the fastest from when I decide to sell my bitcoins.

Fastest option to your bank account is a bank wire. You can have "cash" in your bank the same business day.  Note it is after 5PM EST bank cutoff for same day wires but anything sold now would be "spendable" tomorrow.  Fastest option to an eWallet would be PayPal or Dwolla which is "spendable" within a few hours.

Depends on where you are located and how much bitcoin you are trying to cash out.

While it is unlikely, on https://localbitcoins.com/ you may be able to find someone local who will immediately meet with you any time of day or night and hand you a briefcase full of actual cash in exchange for your bitcoin.

Can you easily turn Amazon gift cards into cash or something more liquid,or are you stuck using them on Amazon?

Without having done enough clever brainstorming, I'd say that you are "stuck" with Amazon gift cards. I'll be adding other gift cards, and later, other forms of money to cash out with.

For now though, its just going to be instant Amazon cash
