Where can I find information or a site that shows the total number of coins that will ever be in existence as compared to what is currently available for the various cryptocurrencies ?

The Digitial Currency is always be increasing as it is creating by minning and as more and more people mine coins, it will always increase.
Its not like FIAT which require Gold to backup etc

You are dreaming mate Smiley. Fiat doesn't need gold or anything "to backup" since 1971. Those are backed only by government regulations and law (AKA promises) what supposed to guarantee the value of that piece of paper Smiley.

You can find the max supply for coins on coingecko. Click on the coin and then you will get a detailed information page.
