I just setup Radeon HD 5830 card to mine for me and I'm using MSI Afterburner to overclock it.
What's the best set up ?
It's acting pretty strange now, as it is jumping from ~700 khash/s , to around 400 khas/s, ~600 khash/s and then to ~100s Mhash/s    Huh
Im using GUIminer, and here comes the question as well , as im not sure if i have choosen the right options  ( server, device, CPU Affinity, Extra Flags)

Any help appreciated!

Sounds like you're scrypt mining. If you're serious about this venture going forward start with this thread and read it end to end as it's a goldmine of info.

Do not use GUIminer, Pleas use CGMiner for some of the best results, It will auto detect the best known settings(flags) for your GPU
For a 5830, I reccomend using intensity 6

Intensity 13 makes my cards fly. I have 40 boxs with 6 5870 in each.I never overclock past 960mhz though. Drop your memory to 300.It will save you 6 degres cen.

I have Asus 5830 myself mining Litecoins.

I was not able to get CGMiner to mine at the speed I have expected, so I end up using the Reaper:

https://bitcointalk.org/index.php?topic=117221.0

Here are my settings:
litecoin.conf
....
protocol litecoin
worksize 256
aggression 18
threads_per_gpu 2
sharethreads 17
lookup_gap 2
gpu_thread_concurrency 6144
cpu_mining_threads 0

The card itself is clocked at 990MHz
and Video Memory is clocked at 1140MHz.

I'm getting about 323KH/s

Good Luck

Your card is alerady overclocked. I have one of them myself. I would not own another. Might be good for gaming. But not for this kind of stuff. You have limits of how much you can down clock you mem. You can downclock 150 frrom original clock. After that you have to keep it at 100 at a time from core clock speed.

This statement is compleatley false, the memory clock differance depends on your drivers and GPU Bios
Im running an Shapphire Extreme 5830 (not lightning) at 940core, 600mem (mem at 600 for gaming) in my brothers computer
Voltages untouched, Very stable
