Well, I guess it's esotheric reasons - you're right, since the rules are hidden you don't know how good or bad a roll really is and thus each roll is as good as any other.

Best guess is that the rules are something special like bigger wager/multiplier or most same numbers in roll or smallest/highest roll number will get bigger price. So when people hit something special they post that bet.
And even if the rules are something totally random you can't lower your win change by posting bet that is somehow special.
