Probably they were called esters. Various products of organic oil and acid reaction. They all have fruit and other tasty smells. In chemistry lessons I did not get past nitroglycerin. I tested few grams of nitroglycerin in chemistry lab, blew up bookshelf and got kicked out of chemistry lab for remainder of semester. So I never got much on organic chemistry.

I guess I'm just trying to find out why we are forced to accept that artificial watermelon flavor is what watermelon tastes like.

Or perhaps I am wrong and maybe watermelon flavoring is actually what watermelons used to taste like and because of the all the sprays and pesticides and human intervention throughout the years has caused watermelons to taste nothing like the artificial flavor.

I dunno about watermellons but I know all the supermarket bought Tomatoes, onions and peppers are too big and shiney and taste nothing like they used to, so if thats happened to the taste over the years imagine whats happened to the vitamin and mineral content of these fruits and veg?

It's a shame that people buy food with there eyes and not there tastebuds anymore, but hey almost 7 billion people on the planet that is running out of oil, what can you do?

Did you know it takes 4x as much oil to produce 1x the amount of artificial fertillizer?

I have never tasted artificial watermelon taste sweets and bubble gums that taste like real, naturally grown high quality watermelon. I think this means that the artificial flavors are not good at the job.
