I would like to change the difficulty to a specific difficulty, is there a guide anywhere in which I can follow to configure some type of software in order to solo mine to a specific difficulty and display my result (not feedback to everyone, as I am testing something)

When solo mining there is only one difficulty and it is 225,832,872,179, right now.  If you find a share that meet's or exceeds this difficulty that will be the only share you submit to the network.

If you're looking for a lower difficulty and you simply want to test/simulate thing, you can try mining on testnet instead.
The difficulty should be much lower.
