If I request a payout from my pool and my wallet is not running, will I be able to receive the transaction when I do start Bitcoin?

BTW, what is it doing while it's running? I notice the blocks keep increasing.

No, the transaction is registered in the blockchain. Your wallet is required if you wish to use the bitcoin, because it contain the keys required to let you use your coins  Grin

While it run it just receive new blocks and send blocks to other clients that still don't have them (after all it's p2p!)

Yes, once you catch up to the blockchain after you start the client, the transactions will appear.

It's receiving and relaying the blocks that have been received.
