What will happen if electrum desapear one day?
How i can recover my bitcoin ?

If this unlikely scenario happens, you can simply extract all your private keys and import them to other wallet and you're good to go again.

Or if you're talking about electrum disappearing from your PC and not from the internet -- just reinstall electrum and restore from seed.
