hello! i want to create genesis block  just for tests, and i would like to know if it's necessary for me to install the bitcoin core GUI or not (i'am using ubuntu) .

The genesis block is hard coded into the client. If you want a different genesis block, you will have to make it yourself.

If you just want to test and experiment with Bitcoin, you can use regtest mode. This will create a private blockchain which you an mine yourself and test various things.
