I was wondering if you can put 2 or even 3 PowerColor AX7970's on one 500w power supply?

depends on scrypt/sha256 and what volts, core, and memory you are running at. my rosewill capstone 450W shut off when I had 2 7970 doing SHA256 at stock volts, OC core, and UC memory.

So 3 would be out of the question.
I just picked up 4 computers with good cpu, memory, ss hard drives, for 0$
Now im trying to figure out how many cards i can fit in each without buying
new power supplies.

Depending on how far you undervolt/downclock, you can get those 7970s to pull anywhere from 75-350W. It can be done, but don't expect amazing performance.

I had 3x7970 bitcoin system running at 520W at the wall.  So I guess you could do it.

The settings were:

vddc: 0.91 V
engine: 900 MHz
memory: 50 MHz
power supply: 1250W platinum cert.
hash rate: ~1.5 Gh/s

But I would not try it to run on a 500W power supply.  Two underclocked/undervolted cards are ok. 
Three you'll be asking for trouble.

Spend the money on the new power supply.  If the power supply pops it can take out the MB or worse.  Spend $79 and get a 700W.
