I'm least knowledgeable about GPUs. I read somewhere that shaders have something to do with the Mhash rate. So would more shaders mean a faster rate? Also, are stream processors the same as shaders?

stream processors =/= shaders

the more the merrier, so the more shaders the better, plus faster memory and/or gpu clocks help u a lot
