Each block is stacked on top of the previous one. Adding another block to the top makes all lower blocks more difficult to remove: there is more "weight" above each block. A transaction in a block 6 blocks deep (6 confirmations) will be very difficult to remove.

I don't understand why anyone would do this, the flow of money would look like this:

Buyer -> Escrow Agent -> Seller

after the seller gets their payment it would be more like this:

Fraud chargeback buyer -> sucker -> seller

That's partly why I rejected OP's request to me too.
I only escrow Bitcoin/Liberty Reserve. (and sometimes: Bitstamp codes <$500)

The bank I use takes a week to transfer to Dwolla and I'm trying to make this a quick turn around.
