lntroduction to Modern Cryptography by Jonathan Katz and Yehuda Lindel.
Depends on what you're looking for. This book has a more mathematical approach.

Here are some links to books that can help you to learn the basic concept of cryptography like using a PGP key, encryption and decryption notes:

www.ggu.ac.in/download/Class-Note14/public%20key13.02.14.pdf
http://ftp://ftp.zedz.net/pub/crypto/pgp/pgp_pdf_files/IntrotoCrypto.pdf
https://courses.cs.vt.edu/cs5204/fall09-kafura/Papers/Security/IntroToCryptography.pdf

A video that explains details about cryptography and its uses:

https://www.youtube.com/watch?v=2aHkqB2-46k

Do you want the books only for beginners or you have the basic knowledge about it? There are many books for advanced readers too.

I'm subscribed on this channel https://www.youtube.com/channel/UCLnQ34ZBSjy2JQjeRudFEDw. It's a daily show about crytocurrencies and might be helpful to stay up-to-date with everything that's going on. Maybe you should check it out when you're a little more experienced with cryptography.

I don't know your level in cryptography but recently I was enrolled in a MOOC of Princeton University which is entitled as Bitcoin and Cryptocurrency Technologies using the Coursera platform. I believe that you can have access in videos and assignments even though has already finished so as to learn some things. In these videos professors are speaking in a initial level of cryptography.

I agree, this is a valuable source of education.
I loved this series, and I do believe it's entirely available starting with this link.  https://www.coursera.org/learn/cryptocurrency/lecture/gFEJL/cryptographic-hash-functions
