A simple question about wallet.dat

Say I currently have a wallet with some coins on it and I save the wallet.dat to a usb stick and delete the wallet from my computer. Can I still buy coins and send them to my original address and will they still end up on the original wallet.dat thats on the usb stick? Or would I have to copy a new wallet.dat everytime I add coins to it?

Every time...as the wallet.dat doesn't update from the internet.
