I've looked around, what is the best windows miner to run?  I have several machines I can run this on.  They are server class (dual 6 core opterons in each) but have lousy graphics cards.  Thanks

I think that the cpu will use more electricity than what you get depending on your electricity cost. However, you may want to try LTC with pooler's CPU miner, you could probably get a few bucks a day, but I don't know if that makes it worth it.

Maybe look into getting some video cards and it sounds like you could have a hell of a rig going.

cpu's are not profitable anymore, only graphics cards

I'd look into upgrading those GPUs of course before looking into mining.

I use an APC Back-UPS to know how much my PC eats power, with a full mining Litecoin(not bitcoin) GPU with ATI 5870, I'm at 350kH/s with cgminer (not bitcoin with Mh/s) and it says I eat up 320W and it seems to cost like €0.75 per day.

and it produces like 0.6 LTC per day (with a pool), which last week was like $4/LTC which means $1.4 pure benefit per day... just a little something

Yea mining LTC would probably be your way to go.
