Escrow is an entity that will hold the coins until the deal is finished.

You agree with the buyer about value and terms, the buyer sends coins to escrow (John is very well trusted, as is Graet, my two go-to people for these deals).
You deliver the goods, the buyer tells the escrow it is ok to release the funds, you receive you coins.

This way if any of the parties tries to pull some trick the entity serving as escrow has the opportunity to verify which of the sides is not behaving, and send the coins to the other party.

Where in Spain are you located? I would very much like to see the car in person, and would likely be interested in buying it myself.

Sorry guys but I really doubt you can donate a car so easily in Spain. Just googling for a while it seems that you have to pay taxes anyway.

Selling the car for a lower quantity in fiat and paying the rest in BTC is illegal in Spain like in all European countries.

Still, I think this is an interesting topic:  how to buy things 'legally' in Europe with bitcoins? Anybody can help me?

and give the license plates with the documents of car, and pay 8 euros

Hm, I got an offer for a spanish car a while ago, was a scam.
I don't want to say moketillos offer could be illegit, but nobody with his head in the right place should buy anything for close to 10000 bucks if he can't be sure to get it, especially if he uses a irreversible transaction like BTC.
And a car? How do you know it's in good shape (technically speaking) without looking at it?

But, well, if you wanted to take holidays in Spain anyway, than why not?
Just make sure to include the Bitcoin payment (including a fresh target address) in the contract.
That way, neither the buyer nor the seller can argue there was no transaction.

The shipping bill confirmation would be too easy to fake. You would have to wait for the car to be delivered and inspected.
