I use hd 7850 and hashing speed floats in between 165 and 320, most of the time it is about 200-280. Do you experience large float also? I use bfgminer with auto-fan settings and gpu temperature is around 70C and pretty stable with fan running about 40-41% load.
Are these large variations in hash speed normal?

I use a 7870 it floats from 300 to 400, seems to me it's normal

For me variations from 300 to 400 is not as big as from 190 to 320. Well, 320 happens not that often, mostly my card hashes around 240. I checked now on eclips and it showed 276.

I Have a 7850 hat bounces between 270 and 320, but usually doesn't vary much more than that.

7750 and float between 140-210. but 157 on average

variation is normal, depending on temp of card. I notice much less "Float" when the ambient temp in the room is cool and stable.

lol i feel really lucky now i dont get more than +,-10mh/s on any of my card 6870s and 5870s try aiming for the sweet spot in temp normally around 50-60C
to cool the cards dont work great to hot they burn up and error

I thought that speed depends mostly of such variables as hardware, software used and work parameters.
Hardware parameters are the same, engine frequency is the same, software used is the same too. Depend of the GPU temperature and settings miner can change the load and it can lead to changing of the speed. But I noticed that card temperature basically is very stable, as is the fan speed. So, I assumed that hashing speed should stay pretty same too. But it looks like more variables involved.

with my 4870x2 i get ~ 250mhash/s mining ltc.... not so good, might be much better with your card...

I am not sure about ltc, but 4870 should have around 70 Mhash/s in BTC mining which is much better than 250 Khash/s
