I have Fsp hydrp G 750w and 850w PSUs. Does watt difference matter If I connect 2 of them to one rig? Will they work properly? What do you think?

No, it doesn't matter.  As long as you are not crossing power feeds, you can use two PSUs.  Use the 750W one to power the Mobo and maybe 1 or two cards and their risers.  Then use the 850W one to power the rest of the GPUs and their risers.  The GPU and riser have to be powered from the same PSU.  Never ever ever power a GPU from one PSU, and the riser from another PSU.  There will be lots of smoke.

 I use usb powered risers as most of us do. I power the mb and usb riser molex connections from 1 power supply. Then all 6 gpu 8pin connections from the other psu. I have done this since day 1 on 5 rigs. NO SMOKE. LOL. That is how 99% of rigs are setup.

If you can find a single PSU with the same wattage at a similar price go for the single PSU solution.

A lot of people say it's better to use 1.
But based on facts i havent read anything that said it would be dangerous or something.
I was thinking about 2 PSU's to, reason: the 1000w/1200/1600 are all sold out or over priced..

I use a server power supply like this to power the cards and the risers for up to 8 cards.

Then I use a ~400w PSU for the motherboard and SSD.

You also want to use PCIe 6 pin powered risers, like this:
