What are the trading fees for trading non btc denominated trades. E.g USDTETH and ETCLTC
Are they somehow converted into BTC, but if at what price?

At the bottom of the page you have a "fees" section. The fees are adjusted to your trading volume beggining ate 0,15%/0,25% (maker/taker) of the coins involved in the trade. The percentage is taken of the coin you end up with. If you buy XEM with BTC you pay a percentage of the XEM. IF you Sell LTC to USDT you pay a percentage of USDT.

The fees on Poloniex are a fixed percentage of the trade.  So if your fees were at 0.25% (because you don't bring a large amount of volume), and you traded 1 XMR into USDT, you would just get 0.25% less USDT.

There's no need to convert to BTC at any point in that trade.
