To understand what is "mining" in Bitcoin, you first need to understand how cryptocurrencies work.

I found this video[1] that couldn't be more clear in a easy way on explaining what is Bitcoin mining. And if you want to understand more, visit the website[2] linked in the same video.

It's available everywhere but it can be pretty expensive and require a lot of investments if you want to mine any coin. I doubt you could do it if you don't have the money and time to research and spend some money on that.

If you are reffering to a crypto coins mining then My simple explanation is using your hardware and electricity for you able to mine a block that is resulting for a block rewards/coins in exchange of your work in mine. Of course it is available in every country as long as you have access to a computer and its required hardware.

Some user already give the definition of the mining. But i personally think that, based on my reading everywhere, i might be wrong because i'm newbie also.Mining today isn’t for everyone. The people who are profiting from mining are basically large corporations that have big mining farms with low electricity costs.
