If I transfer BTC from an exchange to my wallet which is on an offline computer, what happens? I will bring it back up in a week but what happens to the BTC, do they not send or stay still? Thanks.

What i know about that is that when you get online again it will appear on your wallet. Correct me if i'm wrong.

Bitcoin is a public ledger system. The bitcoins don't really exist in your wallet but in the public ledger.
Every node (bitcoin-qt) has a copy of that complete ledger. So when you send your bitcoins from an exchange to your wallet all the nodes record that transaction.
When you bring your offline computer back online it will resync with the other nodes in the network and it will (once it gets the transaction) show you the correct balance.

They still transfer. All you need is a wallet.dat Don't lose it. You'll lose your wallet if your "wallet.dat" gets deleted.

They still transfer. All you need is a wallet.dat Don't lose it. You'll lose your wallet if your "wallet.dat" gets deleted. Is it a solution to copy wallet.dat than save it somewhere in the cloud? (like GDrive, or DropBox?) Thx!

Anyone who has access to unencrypted wallet.dat (or is able to decrypt it) have access to your bitcoins in that wallet. You can encrypt it in the bitcoin program or you can encrypt it independently (or both). Do not loose/forget the password!

What you can do is use TrueCrypt coupled with DropBox and encrypt it on bitcoin-qt.
