in this market new altcoins have always been created based on the succeeding rising altcoins. for example someone creates a coin called X and its price goes up to 10BTC in 3 months. now everyone creates a new coin and call it Y and say we are like X or we forked from X and are better than it.
in case of ether and the projects built on top of it, the above is one of the main reasons.

it is also because most of these are smart contracts and ICOs and creating those and doing a fundraising for your scam ICO is super easy using ether rather than anything else.

I also see that some are flying lately (huge gains...) Gas, OmiseGo...   
I personally invested a bit in OmiseGo. We will see what happens... Smiley

The reason for that is not entirely its technology, they are now most advanced platform for creating decentralized applications but there are no big competitors in the market now.

I'm not a big expert but maybe if there are no big competitors in the market now it's because Ethereum is not so bad...

Do you wanna look at coding a service/product/tool for learning purposes? There are hundreds or maybe thousands of products being developed using Ethereum technology.

If you want to learn how to develop a smart contract code using solidity, you can start with the tutorials from the official Ethereum website:

If you want to fund a business idea that could use Ethereum, think about anything that currently needs a centralized entity as an intermediary (such as Uber and AirBnb) that could be replaced by smart contracts. Established platform there is. Its technology provides a hassle free and fast transaction which makes it convenient for both parties and on top of that, it offers a more secure system and data storage.

Not actually the stability, it's the accessibility, I guess. It's open to any project team and using blockchain technology is not hard for the new teams. The stability represent more intense meaning, we've seen that ethereum has also stability problems. Bad things happened during bancor and status ICO. Remember?

It is the basis of the Ethereum platform... anyone can create a token and sell it to people who are interested.

let me put it this way:
it is used by so many altcoins because it is supposed to be used by so many altcoins. it is designed to do exactly that and nothing else.

in other words your question is like asking why so many people use Firefox to browse internet instead of doing somethign else with it.

Depending roadmap of every project development their token, because still have some altcoin use platform Ethereum as Musicoin can't say token.
This is altcoin mining but use platform smart contract of Ethereum.
