Hello,

I am using an older release of Electrum (2.7.x) for my cold storage. This one is only used for signing the outgoing transactions.

Knowing updating a system without network connections can be a pain, shall I update this one or not ?

There isn't any change in the signing of transaction from 2.7 till now.[1] If you're not experiencing any problems, you don't have to upgrade, at least with great urgency. If you're using a seed, then you are probably fine and doesn't need an upgrade.
