I thought each confirmation took 10 mins
I just requested a withdrawal from one exchange and it was deposited in another exchange with 5-10 mins

It is an AVERAGE of ten minutes, but the actual time between blocks is not guaranteed to be 10.

No.  Each confirmation takes a completely random amount of time.  The difficulty is adjusted every 2016 blocks to keep the long term average close to 10 minutes.  Some confirmations will be MUCH faster.  Some confirmations will be MUCH slower.

As the others said. 10 mins is the average between blocks/confirmations.
Sometimes it takes 30 seconds to mine a block, sometimes it takes 2 hours... They all average each other out.
