Is it better to changing coins between desktop/mobile wallet or a listed exchange better? Are you getting ripped off it you do it via the desktop or mobile wallet like Exodus, Jaxx, Coinomi?

No. Coinomi and Jaxx are also wallets which handles multiple coins and ask the same fees depending on what the network's status is similar to your desktop wallets. They are like the Electrum of supported cryptocurrencies so you should be fine in terms of fees.

I recommend just save it in the exchange wallet because if the coin price goes up 100% you can quickly sell it immediately, another story if you keep it on your desktop or mobile wallet.
