Let's say one has a rig of 6 gpu's. Can one mine all kinds of coins and keep track of them?

 You can run multiple instances of mining software, each one for one GPU and mine different coins that way.  Or you could point your entire rig to a pool like Multipool.us which will mine the most profitable coin automatically for you.  With them you would wind up with several different types of coins.  They offer Scrypt, X-11 and SHA-256 mining.  There are others.

 Also, there is software like Claymore Dual Miner that will mine ETH and one other coin like SIA.
