Mining Lan cable?

I didnt get any information about that but which lan cable would you use for a small mining farm.

Shielded, double shielded or unshielded lan cable?

Cat5 or Cat6?

The one that is compatible with your router and pc. Shielded only if there are too much noise within the area.

mining doesn't use much internet data just a stable connection will do.

Unless you are running long distances (we are talking about 100-200 feet) it usually doesn't matter.  But, I would suggest Cat 5e minimum these days.

If you are using a gigabit switch, cat 5e or cat 6 because such switches often flake out with non-gigabit-rated cables.

 If you are using a 100MB switch, cat 5 or better (but I'd go 5e or 6 to cover future upgrades anyway).

If you are buying new, unshielded Cat 6 cables are your best bet as they cost about the same as buying Cat5e. If you have some old Cat5e cables laying around already, by all means use them first as the performance in a home setting will be roughly the same. Distance and bandwidth requirements are low enough that in a home environment you will not specialized cable.

All my rigs use Cat5, I think they just need stable connection rather than high speed.

Mining does not require very fast internet bandwidth, so CAT5 is more than enough.
