Escrow does not help in any Paypal transaction .

Can you explain what this fee is all about? Once buyer and seller agrees on a price, seller send the bitcoins with adequate transaction fees and buyer sends the fiat or other currency with adequate fees. None of the sending fees is near 16% Grin so what mathematics is this 16% fees?
