So I made my first bitcoin purchase on Bitcoin then sent the bitcoin to my electrum wallet. The status has been pending on Coinbase for over 1 hour with no confirmations. Starting reading the FAQ on Coinbase and it states if fee set to low then transaction could never confirm. I did not know I need to choose a fee. I thought Coinbase automatically includes a fee. Did I mess up? Anything I need to do?

You don't have to choose a fee, Coinbase does it automatically since sometime now. You found an old topic on their FAQ. The fees set by their system is far enough (and sometimes too much high than it coule be). Sometimes transactions take more time than others and sometimes Coinbase has delay doing the transactions. There is nothing that you can do other than to wait.
