"BTC" is in use by the community since 2009. "XBT" is closer to ISO norm, as things like gold are abbreviated "XAU" (AU for aurum/gold). So some people started reserving "XBT" themed domains, others used "XBT" as ticker symbold when integrating bitcoin somewhere where other tickers/currencies/stocks etc are listed.
In the end, as achow101 said, it doesn't matter to the network what the units are called, if you call the smallest unit "satoshi" and what color the "B" has in the logo ;-)
