how do you guys store your alt coins offline in a wallet? i know exodus supports a few, and myether wallet can store quite a lot of Erc20 tokens correct?
But there are like 1169 Cryptocurrencies now, how to store the other ones not supported by myether wallet?
Can you store those obscure alt coins on a paper wallet? or is the only way to store them on exchanges?

There are multiple ways.
You could download official wallet and store local.
Exchanges are also possible but more risky.
And also paper wallets are an option yes.

oh really so do you mean that a paper wallet can store basically any coin from conimarketcap?

I don't think there is such a wallet, but with a bit of improvising you can use an old laptop, download a multi altcoin wallet such as Jaxx.io, or https://coinomi.com/ put all your coins on there, turn off the wifi and voila, here is your "offline" wallet.

Even if the laptop breaks, aslong as your harddrive is still good, and you still memorize your codes/pw, i'm pretty sure you can recover them easily.

I really don't know it is possible or not to store all coins in one wallet.Myetherwallet don't support all coins.It's only  support ETH and ETH based token. But if you want to hold your coin in exchanger,you can.but exchanger always risky

i think it is not possible to save all coins in the one wallet so try to choose best option. first you have to search how many wallets are available in the Internet. and in that how many coins we would like to save in that. next it is good for saving like security and charge etc you have to see these all parameters. next try to buy good wallets for saving coins. security is more important for saving coins so try to choose best wallet for saving more coins.

coinomi supports about 70, exodus seems to support a lot too http://support.exodus.io/article/96-exodus-wallet-roadmap
but its still only supporting just the top 20 or so coins.
So that must mean that unless all these people are using paper wallets (and i doubt it) these people buying all these alt coins are storing them on online exchanges?? There's no other way right?

There is. You just download the official daemon / core hardware wallet for the designated coin, and store them there.

For example Litecoin, https://litecoin.org/ Under downloads you can download their official wallet, which is only used for their cryptocurrency.

You can do this for most wallets, use coinmarketcap.com to visit their homepage, and download the wallet from there.

If you are going to download wallets for altcoins that aren't in the top 100 / lower volume / lower marketcap, you should always make sure that their wallet is safe and secure, developers sometimes hide malware in there.

Usually this isn't the case with most established coins, but you never know.

If you really love cryptocurrencies you will put them all in paper wallets. It is not impossible. If you are really committed to it you will do it.

For Waves tokens you can hold them in the Waves Lite client which is a Google Chrome App. Counterparty has a decent software wallet which will allow you to store Counterparty tokens such as Pepe Cash, Bit Crystal, etc and is worth considering.  So you should not have to download 1169 wallets by any means!

There are a number of coins that you can store on a locally downloaded software app and you may be paid staking returns in the coin uses the PoS consensus method. You are paid proportionately to your share ownership in the blockchain network. As others have mentioned virus scans are essential as you don't want to download malware.  Many small coins have Mac or windows executables, there is no paper wallet available.      

Finally, you can also store some coins on a hardware wallet like the Trezor or Ledger Nano S.

If you are asking for only OFFLINE storage, the best ofcourse is official wallet for each coin, I never hear abut wallat that can hold so many coins, but one of best that can hold few coins is Exodus.

You can download your wallet and keep all your savings there or just replace/ exchange it, but it's a lot more dangerous, of course not everything is limited to these two ways.
