If I am a merchant and I sell 10 identical items via a website and I check an hour later and 8 people have paid for items how do I know which 8 to send my items to?

There are several different types of Bitcoin clients. The most secure are full nodes like Bitcoin Core, but full nodes are more resource-heavy, and they must do a lengthy initial syncing process. As a result, lightweight clients with somewhat less security are commonly used.

Use different payment addresses per user, and keep track of which customer has which address.
