I have a question :
Today, 25/10, BLOCK 491407 REACHED , I still hold the private key of the electrum to receive the bitcoin gold in November, if today I transfer bitcoin into cash or sell it then in November I get bitcoin gold or not ?

If electrum is going to honor the snapshot then yes since it has already occured if you were to get them you will get them regardless of what happens now. I think the distribution is going to happen on Nov 1st but I could be

off on that part. But I am certain that because the snapshot already happened you will get your BTCG whenever it arrives (if they honor it that is).
