I see a lot of chatter about the idea of a personnel full node, or everyone carrying a node in their pocket. Is there actually a large demand for this or is it a few hardcores. Who here as their own node? Who would buy one? For how much? Would you download a full node wallet over another one?

Even if you use Bitcoin through Tor, the way transactions are handled by the network makes anonymity difficult to achieve. Do not expect your transactions to be anonymous unless you really know what you're doing.

The benefit which BTC supporters often mention the most is trustlessness - the ability to run your wallet and control your coins without having to trust a third party in doing so.

A full node is the only way of being 100% certain that none of BTC's consensus rules have been broken.  This has happened during an accidental chain fork in July 2015.

Note though that this still doesn't involve one central location for all wallets, because there are a lot of different full nodes and different wallet services.  But it does require reliance on other people who are running full nodes, so it's important that it's relatively practical for people to run full nodes.

It's not essential for absolutely every user to be running a full node at all times, and personally I'm perfectly happy using my TREZOR as an SPV wallet.

Sure I get the benefit but what's the demand? It would be fairly easy to set up and post and supply a full node. Does everyone who wants that have one on their own server? How many bitcoins or how much fiat would people who want a full node pay for one?

Some people turn to cloud storage services like Amazon, Google Drive or whatever else they want to use.
How many bitcoins or how much fiat would people who want a full node pay for one?
A cloud storage service or any other service offering to run nodes for people is a third party, and anyone wanting to run nodes with those groups would have to trust that the service is abiding by the consensus rules in the same way that other wallets have to trust that full nodes are abiding by consensus rules.

I'm sure that there are people who would pay for such a service, but the amount that you would charge should be less than the value of the user putting in effort for setting up the node themselves.  You would also have to offer a lot of options for customisation of what the user wants (such as following a certain fork).
