I normally see CGminer and BFGminer for mining Bitcoin and Litecoin, but what kind of software and hardware do you use for other coins?

Monero
IOTA
Golem
Dogecoin
Ethereum

Well you cannot mine IOTA and Golem. If you go to coinmarketcap it will tell you which currency is minable. Monero is cryptomight and you can use claymore gpu miner, cpuminer or ccminer.
