is antminer S9 or asic hardware pretty much the only viable option for profit mining these day's?

for a custom built rig does CPU matter (# of cores) or would focusing on GPU be best?

Every time a block is mined, a certain amount of BTC (called the subsidy) is created out of thin air and given to the miner. The subsidy halves every four years and will reach 0 in about 130 years.

I personally would prefer GPUs. You can only use ASICs for what it's made for, mining BTC. Whereas with GPUs, if ever mining becomes unprofitable for you, you could still resell those GPUs for a cheaper price or maybe even use GPUs for your own personal rig.

Yes, I would most definitely go with GPU as well. More flexibility and in worst case scenarios you can sell GPUs as mjglqw said

I was thinking of building a frankenstein-ish 'super server' rig for mining
 the main components+parts would be:

*Dell PowerEdge C6145

Unfortunately I really don't know much about which GPUs are best to use as I don't personally do mining. Instead, I suggest you to take a look at this: https://www.nicehash.com/profitability-calculator ; might help you decide on which GPUs are best.

I'd say GPU is a winner against aisic. The reason is that when your asic will get obsolete (and it happens very quick) you will have very narrow range to choose what to mine next and you will not be able to sell it in the market, so you will scrap it. While GPU's are very easy to sell to gamers, and you can choose within a very wide range of mining coins Smiley
