The Bitcoin network protocol was designed to be extremely flexible. It can be used to create timed transactions, escrow transactions, multi-signature transactions, etc. The current features of the client only hint at what will be possible in the future.

Of course they are. Their coolers are not as good as the non-reference gtx 1080 cards, but they're still sufficient enough for 24/7 mining.

It's essentially just a reference 1080. They perform about the same and they should work with mining like any 1080. Noise and sound on reference cards can be more than aftermarket cards but it's not a huge deal usually when it comes to mining.
