Fairly sure it takes 6 confirmations for Electrum to mark a transaction with a green tick.
Once it gets 1 confirmation, the icon should change from a ? symbol to a small clock icon...
Honestly, (sadly?) an 8+ day wait is fairly typical at the moment for low fee transactions... The network has been swamped for more than a week... Consistently over 100,000+ unconfirmed transactions.

Not verified means that no confirmation has been found. Is the little dot in the bottom right corner red or green?
If it's red, then you have no connection to the network and would explain why Electrum hasn't updated.
If it's green then, in all likelihood, your transactions still aren't confirmed. This isn't an Electrum issue, it's a Bitcoin network issue and any wallet would show the same thing.
Were the coins from these 2 stuck transactions the only coins in your wallet? If so, then it's very strange that you were able to shift them out of Electrum. If they weren't, then your wallet probably just sent other "confirmed" coins.
However, without having access to the transaction IDs to see what's actually happening, it's all just guesswork from this side.
