Are the BTC % and Vol % a percent change or a % of the total volumes for a given exchange.

It is the percentage of change for the given timeframe. This is for the tables/alerting structures.

However we also have total volume for our analysis pages (RSI, Volume, etc) where you can visualise this information in graphs.

i suggest you use Info-graphics or hire a graphic designer when telling announcements and/or things about your application, because having a great design for information which contains many paragraph makes anyone read your post even it is too long in transcript.
