Right now I only mined Bitcoin and Ethereum with a program I downloaded, I put in a mining pool an then it worked.
But how do I mine coins that don’t have a program to download like that? How can you start mining with them? How can you mine without a mining pool? I am very new to crypto currency

Bitcoin mining is now a specialized and very risky industry, just like gold mining. Amateur miners are unlikely to make much money, and may even lose money. Bitcoin is much more than just mining, though!

Just about all crypto's that are mine-able have how to guides. If they dont they either arnt minable or have other ways of aquiring them (Like Ark's Delegation / Voting system)  If your not technical youll need to outsource setup, buy into setup or stick with , Minergate? or other user friendly platforms that arnt so "technical" do consider minergate is very shady and keeps tons of the hash your contributing.

Try minergate. It is an easy way to get into it without having to dig too deep into the technical side.

I can't speak for all altcoins, but certainly with Credits(CRDS) you can mine directly from the wallet itself. Open the Debug Console from the wallet and type 'setgenerate true -1' to mine using all CPU cores, or 'setgenerate true x' to mine on x number of cores.
