Yes you can. Assuming that you are talking about the mobile phone app, you can update it whenever you want as long as the wallet is backed up.
The bitcoin address will receive the coin to the address whether or not the you have the app installed on your device. You can even uninstall the the electrum app and install it again and restore the wallet with the passphrase and you will see your coins received in your wallet. It is not necessary for a wallet to be online to receive any funds. The funds will be deposited to the address. You can see the funds as soon as the wallet is synced with the network.

the way bitcoin works is that you only hold a key which we call "private key" everything else is stored on the blockchain which the nodes hold. your transactions, the blocks,... are on the blockchain held by nodes. even the unconfirmed transactions are held by nodes in their memory pool.

you use a wallet to generate a random key and then use the private part to prove ownership of transactions when spending and use the public part to give others so they can send you bitcoin in other words transfer ownership to you.
